To prepare the cavatelli first take the semolina flour and make a circle.

500 (durum wheat flour ( remilled semolina ))
260 (Of water ( ambient temperature ))
1 (a pinch of salt up)

A bowl to put the dough, a pastry board for after the dough and a rolling pin.

Steps

To prepare the cavatelli first place the flour of semolina fountain on the pastry board ( or in a large bowl ). Form a hole in the center of the pile of flour and add a pinch of salt. Gradually pour the water and begin to knead with your hands. When you have added all the the water transfer the dough to a pastry board and knead vigorously for about 10 minutes. Fold the dough several times and pull it from the center forward to make it more elastic.
